2007 Protero Cabernet Sauvignon

Protero are part of the massive ground swell that is organic viticulture and winemaking – not just in the Adelaide Hills but in all fine wine regions in Australia. 2010 has seen Protero being awarded their hard earned accreditation by NASAA. Not only do Frank and Rosemary Baldasso produce the grapes for their wines on their land, but they have also planted an orchard which is, of course, organic. In speaking to Rosemary, you begin to realise that this endeavour is a ‘retirement plan’ that keeps them busier than ever.
Although these vineyards are still in their youth, this Cabernet is from grapes planted in 2000. They are already producing wines of rich concentration. This wine is literally leaping out of the glass with purple hued vigour – a testament to their careful nurturing as much as their lack of fining or filtration. The blackcurrant, liquorice and earthy herbal characters are firmly supported by fine tannins and a peppery finish.
With some decanting, that firm mid palate loosens a little giving the fruit more generosity and fullness. This wine is still young, and needs some untouched rest time in the cellar for another 5+ years – I recommend that you buy more than one so you can enjoy this wine in its youth and when it hits the prime of its life.
Enjoy it with some spring lamb kebabs lightly grilled and served on a bed of greens with grilled haloumi and pine nuts.
