Poached Plums with Mascarpone, served with 2008 Wirra Wirra Mrs Wigley Moscato

Ingredients

8 plums (2 per serve)

100 grams of castor sugar
half a vanilla pod (split and remove seeds)
half a cinnamon stick
mascarpone cream

Preparation

Wash plums and remove the stones keeping the plums intact.

Dissolve sugar in a pot of water and bring to boil.
Turn down and simmer.

Place plums in the pot so the water covers half the plums.

Add vanilla pod and cinnamon stick.

All the time spoon water over the top of the plums

After 15 minutes remove the plums and cool a little.

Skin them and serve with a dollop of mascarpone.


The 2008 Mrs Wigley Moscato should be served lightly chilled. The wine is a wonderful complement to the strong vanilla and cinnamon flavours. The light salmon colour of the Moscato with the plums adds a lovely elegance to the table.

Bouquet: A muscat nose, showing floral notes and musk sticks, with hints of fresh summer berry fruits and orange peel.
Palate: Turkish delight and juicy summer berries are bright and fresh. The acid is firm and wonderfully refreshing, and combined with the low alcohol, it is perfectly balance with a touch of sweetness and a lively tingle of fizz.
Alcohol: 6.8%
Varieties: Red Frontignac (60%),

White Frontignac (40%)
